Cumin Crisps (crackers)
I got this recipe from my good friend Kevin Ryan. He was teaching a class recently and
shared it with the students.
1 cup all-purpose flour
2 tablespoons granulated sugar
6 tablespoons rice vinegar
1 tablespoon cumin seeds
2 tablespoons unsalted-butter, melted
1/2 cup water, or more
Heat oven to 450ºF.
Combine flour and sugar stirring to combine. Add rice vinegar, cumin seeds and butter.
Stir in water (add more as needed) until a spreadable consistency is achieved.
Drop by teaspoons onto a parchment lined sheet pan. Spread until paper thin over two
parchment lined sheet pans. Bake for 5-7 minutes or until edges begin to brown. Remove
from oven and let cool.
